Thai Style Chicken Soup

My friend who lives in Switzerland wants to learn how to prepare Thai style chicken soup as she used to taste in Thailand. She lived in Thailand for almost 2 years studying master degree at the same institute with me. And now (February) it is so cold in Switzerland, so she reminds the sweet, clear chicken soup in Thailand.






Let´s prepare the ingredients!

1. Chicken wings, or breast, or leg or any part of chicken with bone (the bone will give natural sweetness to the soup)



2. White Radish (the radish when boiled becomes natural sweetener in the soup)


3. Garlic
4. Black Pepper
5. Ginger
6. Coriander Stem 
7. Coriander leave
8. Spring onion
8. Salt
9. Water 2 liters

I did not give any measurement of the ingredients, it´s flexible depending on your taste.



Now ready to cook....

1. In pot, pour in the water and turn on high heat.
2. Give a good whack to break the garlic, black pepper, ginger, and coriander stem. Add all those whacked ingredients into the water.
3. Bring the water to boiled.
4. Add chicken and keep boiling in low heat, wait for 10 minutes until the chicken cooked.
5. While wait, peel off the skin of the white radish, and cut horizontally.
6. Add the radish into the soup.
7. Keep boiling for at least 45 minutes until the chicken is soft.
8. Season with salt and taste if you need to add more salt. 
9. Your soup is ready to serve!!! you can serve the soup separately from the chicken. Garnish the soup with coriander and spring onion. The chicken can be served with rice and soy sauce with lemon juice, chili, chopped garlic and ginger. Or just simply serve all together and eat with steamed rice.
